UNBELIEVABLY COMPLEX Unique and expressive, Incredulous Laughter is a beer deeply connected to the land through the use of locally-sourced, specialized ingredients. This beer features buckwheat honey sourced from Swarmbustin' Honey in West Grove, PA. Yeast, Brettanomyces, and natural bacterias went to town on fifty pounds of this thick, dark, molasses-like honey during the fermentation process. The result is a light, dry, moderately tart beer absent of cloying sweetness, contrary to what you might expect from the the robust, earthy and malty flavor inherent to the honey.
Eight months of aging in seasoned red wine barrels adds layers of complexity and flavor, with refined notes of candied flowers and SweetTarts. We dosed the secondary fermentation with the same honey (in place of sugar) to initiate carbonation, staying true to the theme of ingredient locality. This is the first bottling of this dry, spritzy, tart, effervescent, gently funky Biere De Miele (which translates directly from French to "Honey Beer" in English). A seasonal stunner to be enjoyed with fruit and cheese, fish and chicken dishes, and lighter fare.
