FAR FROM PLAIN Our Baltic Porter bears big-time complexity thanks to just-emptied bourbon barrels and fruity Tahitian Vanilla. Voluntary Exile is first fermented low and slow with our house German lager yeast and lagered in stainless steel for 3 months. This batch was aged in Heaven Hill Bourbon Whiskey Barrels for 13 months before receiving the Tahitian Vanilla treatment.
What makes Tahitian Vanilla so special? Behind the dessert-like character one would expect, hints of dried fruit and leather shine through. We chose to age the beer further on this particular vanilla variety to play off the base beer's chocolate notes, hints of smoke, and bourbon aromas. The resulting beer possesses integrated vanilla flavor, leaving sweet impressions on your palate as opposed to overwhelming you with sweetness. Finishing remarkably dry, round, creamy, and smooth, it's a beer that's always worth the wait.
