PEEL IT BACK Several things make this particular farmhouse ale special. First: our house mixed culture, which possesses a dominant Brett strain that, when afforded the luxury of time and optimal conditions, births a beer that hits the sweet spot of funk and fruit aromatics. Second: six months of aging in freshly-emptied Syrah barrels from California, which imparted oak flavor and wine character to the beer's taste and texture. Third: can-conditioning and presentation in small servings, suited to the beer’s unfussy, designed-for-immediate-consumption drinkability. This beer developed over a period of eight months from brew to release and for such a small package, is quite layered, yet easy to love.
What I Thought I Thought began as a saison brewed with New York State Raw Wheat, and transformed into a beer that’s funky, refreshing (think: tons of tiny, spritzy bubbles), and one-of-a-kind. Mixed culture beers are somewhat of a lottery, due to the evolving nature of the wild yeasts. We classify this category of beers the “snowflake” side of brewing, meaning that no two batches will ever be exactly the same.
