For our second collab with Yesfolk Tonics, we were inspired by the traditional Mexican beverage, Tepache. This tangy, pineapple-based drink inspired us to create something truly unique together.
This project began with a lightly tart saison aged for nine months, developing fruity, citrusy, and floral notes. We then conditioned the beer with pineapple skins and cores, letting it ferment for two months. And finally, we used organic Panela Sugar to carbonate, which added an extra layer of complexity to the brew, resulting in a bright, spritzy drink full of wild, expressive flavors.
