CHANGE IS INEVITABLE Our latest batch of barrel-aged imperial stout is a treat, blessed with robust whiskey notes from barrels that once housed Wild Turkey bourbon stock. Our original Imperial Stout (Everything Was Forever) undergoes a two-day brew. We boil the wort for three hours each day to catalyze the chemistry required to achieve rich depth of color and flavor, as well as the gravity necessary to hit 10% ABV. After primary fermentation, it is transferred into Wild Turkey Bourbon barrels for thirteen months of conditioning.
As the temperature outside the barrel rises and falls, the beer pulses in and out of the capillaries of the wood, picking up flavors imparted by the charring process, oak tannins, and of course, the liquid these barrels once housed for years on end. The result is a rich, luscious beer with layers of complexity and depth. Pour yourself a glass and admire a thick, cappuccino-colored halo atop an opaque jet black base. A great candidate for cellar aging.
