Select Simcoe hops lend big grapefruit and soft stone fruit notes with hints of pine. A special variety of Chico yeast (regarded as the West Coast beer yeast, popularized by Sierra Nevada) imparts a stable hop haze without eclipsing the beer's flavor. Simcoe is a component in each of the hop blends in our flagship NEIPA and West Coast IPA. It's well-suited to receive the single-hop treatment, yet dynamic enough to flex to both West Coast and East Coast IPA styles, making it a perfect choice for this beer.
