WORK AS PLAY This collaboration was born of a kinship of home. Our head brewer and Hudson Valley's head brewer live within a 15-minute drive from one another, and share gardening tips as often as they share brewing approaches. We approached HVB about a project using herbs from their head brewer’s garden aged with our house Passing Time culture, which became The Nature of the Fun. This beer was engineered to meet at the intersection of Hudson Valley beers, which lean more sour and developed, and ours, which lean more understated and restrained.
This incredibly expressive, flavorful little botanical saison gets its oomph from a heap of Tangerine Marigold, Lemon Verbena, and Lemongrass (and a handful of Sonnet hops) added to the boil. Gin barrels didn't factor into the equation until we began to taste how the beer was developing, noticing the similarities it shared with some of our favorite gin cocktails. Following two months in the fermentor, The Nature of the Fun spent an additional three months ripening and conditioning in freshly-emptied gin barrels with a light char.
